Description

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon ground ginger
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until soft.
  2. Add the sweet potatoes and ginger; cook for 5 minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat and simmer for 20 minutes until sweet potatoes are tender.
  5. Blend the soup until smooth.
