A creamy and nutritious sweet potato soup.
Ingredients

- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon ground ginger
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until soft.
- Add the sweet potatoes and ginger; cook for 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for 20 minutes until sweet potatoes are tender.
- Blend the soup until smooth.
- Stir in coconut milk and heat through.
- Season with salt and pepper before serving.
Notes
- Serve with crusty bread.
- Store leftovers in the fridge for up to 3 days.
- Can be frozen for up to a month.
