- 2 medium sweet potatoes, peeled and diced into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste

Instructions
- Preheat your air fryer to 400°F (200°C).
- In a large bowl, toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Place the sweet potatoes in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Air fry for 15-20 minutes, shaking the basket halfway through, until the sweet potatoes are crispy and fork-tender.
- Remove from the air fryer and garnish with fresh parsley if desired. Serve hot.
Notes
- For extra flavor, add some cayenne pepper or chili powder for a bit of heat.
- Make sure not to overcrowd the air fryer basket, as this can prevent the sweet potatoes from getting crispy.
