Ingredients

  • 1 large head of romaine lettuce, chopped
  • 1/2 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce or tamari
  • 1/4 cup water (more if needed for consistency)
  • Salt and pepper to taste
  • Croutons for topping
  • Parmesan cheese for garnish (optional)

Instructions

  1. In a large salad bowl, combine the chopped romaine lettuce.
  2. In a separate bowl, whisk together tahini, lemon juice, Dijon mustard, minced garlic, soy sauce, and water until smooth and creamy. Adjust the consistency with more water if needed.
  3. Season the tahini dressing with salt and pepper to taste.
  4. Pour the tahini dressing over the chopped romaine and toss to coat evenly.
  5. Top with croutons and sprinkle with Parmesan cheese if desired.
