Ingredients

  • 2 lbs beef short ribs
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season short ribs with salt and pepper, then sear on all sides until browned. Remove and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened, about 5 minutes.
  4. Stir in garlic, tomato paste, thyme, and rosemary. Cook for 1 minute.
  5. Return short ribs to the pot and pour in beef broth.
  6. Bring to a simmer, cover, and cook on low heat for 2.5–3 hours until meat is tender.
  7. Serve hot with mashed potatoes or crusty bread.
