Ingredients

  • 4 cups shredded cabbage
  • 1 red bell pepper, sliced

  • 1/4 cup chopped cilantro

  • 1/4 cup chopped peanuts
  • 2 tbsp lime juice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp peanut butter
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1/2 tsp red pepper flakes

Instructions

  1. Cook chicken breasts until fully done, then shred.
  2. Combine cabbage, bell pepper, carrot, cilantro, and green onions in a bowl.
  3. Add shredded chicken.
  4. Whisk lime juice, soy sauce, honey, peanut butter, ginger, garlic, and red pepper flakes.
  5. Pour dressing over salad and toss.
  6. Sprinkle chopped peanuts on top.
  7. Serve immediately.
