Ingredients

- 2 boneless, skinless chicken breasts
- 4 cups shredded cabbage
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
- 1/4 cup chopped peanuts
- 2 tbsp lime juice
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp peanut butter
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1/2 tsp red pepper flakes
Instructions
- Cook chicken breasts until fully done, then shred.
- Combine cabbage, bell pepper, carrot, cilantro, and green onions in a bowl.
- Add shredded chicken.
- Whisk lime juice, soy sauce, honey, peanut butter, ginger, garlic, and red pepper flakes.
- Pour dressing over salad and toss.
- Sprinkle chopped peanuts on top.
- Serve immediately.
Notes
- Use rotisserie chicken for faster prep.
- Adjust spice level with more or less red pepper flakes.
- Store leftovers refrigerated for up to 2 days.
