  • 1 stalk lemongrass, bruised
  • 3 kaffir lime leaves
  • 1 inch galangal, sliced
  • 2 red chilies, sliced
  • 1 cup mushrooms, sliced
  • 1/4 cup cilantro, chopped

Instructions

  1. Heat chicken broth in a pot over medium heat.
  2. Add lemongrass, kaffir lime leaves, and galangal. Simmer for 5 minutes.
  3. Add chicken and cook until no longer pink.
  4. Stir in coconut milk, fish sauce, lime juice, and brown sugar.
  5. Add mushrooms and chilies. Simmer for 3 minutes.
  6. Garnish with cilantro before serving.
