- 2 medium zucchinis, sliced lengthwise into thin strips
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 egg, lightly beaten
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried basil
- 1 cup marinara sauce
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F.
- Brush zucchini slices with olive oil and grill or bake for 2 minutes per side.
- Mix ricotta, mozzarella, Parmesan, egg, garlic, salt, pepper, and basil in a bowl.
- Spread 1/2 cup marinara sauce in a baking dish.
- Place a spoonful of cheese mixture on each zucchini slice and roll up.
- Arrange rolls seam-side down in the baking dish.
- Top with remaining marinara sauce and sprinkle with extra mozzarella.
- Bake for 20-25 minutes until cheese melts and sauce bubbles.
