- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 3 eggs
- 1 cup strong brewed coffee, cooled
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 2 tbsp cocoa powder
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F and grease two 9-inch round cake pans.
- Mix flour, sugar, and salt in a bowl. Add eggs and coffee, then stir until smooth.
- Divide the batter between the pans and bake for 25-30 minutes until a toothpick comes out clean. Let cool.
- Whip the heavy cream, mascarpone, and vanilla until stiff peaks form.
- Place one cake layer on a plate, spread half the cream mixture, then repeat with the second layer.
- Dust the top with cocoa powder and refrigerate for 4 hours before serving.
Notes
- Use freshly brewed coffee for the best flavor.
- Chill the mixing bowl and beaters before whipping the cream.
- Refrigerate the cake to set the layers properly.
