- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable broth

- 1 teaspoon dried oregano

- 1 cup cooked rice
- Fresh basil for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the crushed tomatoes, vegetable broth, dried basil, and dried oregano. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
- Stir in the cooked rice and cook for an additional 5 minutes until heated through.
- Serve hot, garnished with fresh basil if desired.
