- 1 package (9 oz) cheese tortellini
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup black olives, sliced
- 2 tablespoons fresh parsley, chopped
Instructions
- Cook the tortellini according to package instructions. Drain and rinse under cold water.
- In a bowl, whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, garlic powder, salt, and black pepper.
- Add the cooked tortellini, cherry tomatoes, red onion, black olives, and fresh parsley to the dressing. Toss gently to combine.
- Refrigerate for at least 30 minutes before serving.
Notes
- For a lighter version, substitute Greek yogurt for sour cream.
- Add grilled chicken for extra protein.
- Best served chilled.
