Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, diced
  • 1 cup mushrooms, diced
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon brown sugar
  • 1 head of butter or iceberg lettuce, leaves separated
  • Chopped green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add garlic and ginger, sauté for about 1 minute until fragrant.
  3. Add ground turkey, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in diced bell pepper and mushrooms, cooking for an additional 3-4 minutes until veggies are tender.
  5. In a small bowl, mix soy sauce, rice vinegar, sesame oil, and brown sugar. Pour over turkey mixture and stir to combine. Cook for another 2-3 minutes.
  6. Remove from heat and let cool slightly.
  7. Spoon turkey mixture into lettuce leaves, garnish with green onions and sesame seeds.
  8. Serve immediately and enjoy!
