Ingredients

- 1 cup cherry tomatoes, halved

- 1 tbsp lemon juice
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- In a large bowl, combine chickpeas, cucumber, bell pepper, red onion, cherry tomatoes, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, cumin, salt, black pepper, and red pepper flakes.
- Pour the dressing over the salad and toss gently to coat.
- Let the salad sit for 10 minutes to allow flavors to blend.
- Serve chilled or at room temperature.

- For best flavor, refrigerate the salad for at least 30 minutes before serving.
- Add crumbled feta cheese for extra richness (optional).
