Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • 1 tbsp grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season salmon fillets with salt, pepper, and oregano.
  3. Cook salmon for 4-5 minutes per side until golden and cooked through. Remove from skillet.
  4. In the same skillet, add garlic and sauté for 30 seconds.
  5. Add tomatoes and spinach, cooking until spinach wilts (about 2 minutes).
  6. Sprinkle with red pepper flakes and lemon juice.
  7. Return salmon to the skillet and top with Parmesan if using.
  8. Serve immediately.
