Ingredients

- 2 salmon fillets (6 oz each)
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional)
- 1 tbsp lemon juice
- 1 tbsp grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season salmon fillets with salt, pepper, and oregano.
- Cook salmon for 4-5 minutes per side until golden and cooked through. Remove from skillet.
- In the same skillet, add garlic and sauté for 30 seconds.
- Add tomatoes and spinach, cooking until spinach wilts (about 2 minutes).
- Sprinkle with red pepper flakes and lemon juice.
- Return salmon to the skillet and top with Parmesan if using.
- Serve immediately.

- Use fresh salmon for best results.
- Adjust red pepper flakes to taste.
