A delicious and creamy Tuscan orzo dish packed with shrimp, sun-dried tomatoes, and spinach, all brought together with a rich garlic and herb sauce.

- 1 cup orzo pasta
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the orzo according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the garlic and sauté for 30 seconds until fragrant.
- Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
- In the same skillet, add the sun-dried tomatoes and spinach. Cook until spinach is wilted.
- Stir in the heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Bring to a simmer.
- Add the cooked orzo and shrimp back to the skillet, stirring to combine everything well.
- Cook for an additional 2-3 minutes until heated through.
- Garnish with fresh basil before serving.
Notes
- You can substitute the shrimp for chicken or keep it vegetarian by adding more vegetables.
- For a lighter option, use half-and-half instead of heavy cream.
