Ingredients

  • 1 cup orzo pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the orzo according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the garlic and sauté for 30 seconds until fragrant.
  3. Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
  4. In the same skillet, add the sun-dried tomatoes and spinach. Cook until spinach is wilted.
  5. Stir in the heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Bring to a simmer.
  6. Add the cooked orzo and shrimp back to the skillet, stirring to combine everything well.
  7. Cook for an additional 2-3 minutes until heated through.
  8. Garnish with fresh basil before serving.

Notes

  • You can substitute the shrimp for chicken or keep it vegetarian by adding more vegetables.
  • For a lighter option, use half-and-half instead of heavy cream.
