Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • Parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, oregano, and basil. Add to the skillet and cook for about 7-8 minutes on each side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, add onions and garlic. Sauté until onions are translucent, about 3-4 minutes.
  4. Add cherry tomatoes and cook until they start to soften, about 2-3 minutes.
  5. Stir in the white beans and chicken broth. Bring to a simmer and let cook for 5 minutes.
  6. Add the spinach and cooked chicken back to the skillet. Cook for an additional 2-3 minutes until the spinach is wilted.
  7. Serve hot, topped with Parmesan cheese if desired.
