A creamy and cheesy twice baked potato casserole made in a crockpot.
Ingredients

- 6 medium potatoes, peeled and diced
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 packet ranch seasoning mix
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
Instructions
- Place the diced potatoes in the crockpot.
- In a bowl, mix sour cream, cheddar cheese, milk, melted butter, and ranch seasoning.
- Pour the mixture over the potatoes in the crockpot.
- Add crumbled bacon and green onions.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or until potatoes are tender.
- Stir before serving and top with extra cheese if desired.
Notes
- This dish can be made ahead and stored in the refrigerator before cooking.
- Feel free to add other toppings like chives or additional cheese.
