A creamy and cheesy twice baked potato casserole that is easy to prepare and full of flavor.
Ingredients

- 4 large potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup butter
- 4 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for 1 hour or until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out the insides into a bowl.
- Add sour cream, cheddar cheese, milk, butter, green onions, salt, and pepper to the potato insides and mix well.
- Fill the potato skins with the mixture.
- Place the filled potatoes in a baking dish and sprinkle with extra cheese.
- Bake for an additional 20 minutes until heated through and cheese is melted.
Notes
- Feel free to add bacon bits for extra flavor.
- You can use different types of cheese if desired.
- This dish can be made ahead of time and reheated.
