A romantic dinner for two on Valentine’s Day.
Ingredients

- 2 fillets of salmon
- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 lemon, sliced
- 1 bunch of asparagus
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and let simmer for 15 minutes.
- On a baking sheet, place salmon fillets and asparagus. Drizzle with olive oil, salt, and pepper. Add lemon slices on top.
- Bake for 15-20 minutes until the salmon is cooked through.
- Fluff the quinoa with a fork and serve with the salmon and asparagus.

- Pair with a glass of white wine.
- Use fresh herbs for added flavor.
