Description

A romantic dinner for Valentine’s Day.


Ingredients

  • 2 fillets of salmon
  • 1 cup of quinoa
  • 2 cups of vegetable broth
  • 1 tablespoon of olive oil
  • 1 lemon, sliced
  • Fresh herbs (parsley, dill)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse quinoa under cold water.
  3. In a pot, combine quinoa and vegetable broth, bring to a boil.
  4. Reduce heat, cover, and simmer for 15 minutes.
  5. Meanwhile, place salmon on a baking sheet.
  6. Drizzle olive oil, and season with salt, pepper, and lemon slices.
  7. Bake for 12-15 minutes until cooked through.
  8. Fluff quinoa with a fork and serve with salmon.
  9. Garnish with fresh herbs.
