A romantic dinner for Valentine’s Day.
Ingredients

- 2 fillets of salmon
- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 lemon, sliced
- Fresh herbs (parsley, dill)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth, bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Meanwhile, place salmon on a baking sheet.
- Drizzle olive oil, and season with salt, pepper, and lemon slices.
- Bake for 12-15 minutes until cooked through.
- Fluff quinoa with a fork and serve with salmon.
- Garnish with fresh herbs.

- Pair with a side salad.
- Use any preferred fish.
