A delicious vegan Christmas dish that everyone will enjoy.
Ingredients
Scale
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped kale
- 1 cup diced carrots
- 1/2 cup dried cranberries
- 1/4 cup chopped walnuts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add carrots and sauté for 5 minutes.
- Add kale, salt, pepper, and thyme. Cook until kale wilts.
- Stir in cooked quinoa, cranberries, and walnuts.
- Serve warm.
Notes
- Feel free to add your favorite vegetables.
- This dish can be made ahead and reheated.
- Use different nuts for added flavor.
