Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup chopped kale
  • 1 cup diced carrots
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add carrots and sauté for 5 minutes.
  6. Add kale, salt, pepper, and thyme. Cook until kale wilts.
  7. Stir in cooked quinoa, cranberries, and walnuts.
  8. Serve warm.
