Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped carrots

- 1 cup chopped bell pepper
- 1 cup chopped mushrooms
- 1 cup green beans
- 2 tablespoons olive oil

- 1 teaspoon onion powder
- Salt to taste

Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and cook for 15 minutes until fluffy.
- In a skillet, heat olive oil over medium heat.
- Add carrots, celery, and bell pepper, cooking for 5 minutes.
- Add mushrooms and green beans, cooking another 5 minutes.
- Season with garlic powder, onion powder, salt, and pepper.
- Combine vegetables with cooked quinoa.
- Garnish with fresh herbs before serving.
