Ingredients

  • 1 cup canned artichoke hearts, drained and chopped
  • 1/2 cup raw cashews, soaked for 4 hours
  • 1/4 cup nutritional yeast
  • 1/4 cup coconut milk
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine soaked cashews, nutritional yeast, coconut milk, garlic, lemon juice, salt, and pepper. Blend until smooth.
  3. In a mixing bowl, combine the spinach and artichokes with the blended mixture.
  4. Transfer the mixture to a baking dish.
  5. Bake for 20-25 minutes until heated through and slightly golden on top.
  6. Serve warm with tortilla chips or bread.

Notes

  • For a spicier dip, add red pepper flakes.
