Description
A delicious vegan dish for St. Patrick’s Day celebration.
Ingredients
Scale
- 1 cup green lentils
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt to taste
- Black pepper to taste
- 2 cups chopped kale
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, carrots, and celery. Sauté until soft.
- Add lentils, broth, thyme, and rosemary. Bring to a boil.
- Reduce heat and simmer for 25-30 minutes until lentils are tender.
- Stir in kale and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve warm.
Notes
- Can substitute lentils with chickpeas.
- Add more vegetables if desired.
- Serve with crusty bread.
