Ingredients

Scale
  • 1 cup green lentils
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt to taste
  • Black pepper to taste
  • 2 cups chopped kale
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Sauté until soft.
  3. Add lentils, broth, thyme, and rosemary. Bring to a boil.
  4. Reduce heat and simmer for 25-30 minutes until lentils are tender.
  5. Stir in kale and cook for an additional 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve warm.

Notes

  • Can substitute lentils with chickpeas.
  • Add more vegetables if desired.
  • Serve with crusty bread.
