- 1/2 cup coconut oil, melted
- 1/2 cup brown sugar
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix melted coconut oil and brown sugar until combined.
- Add almond milk and vanilla extract, then stir.
- In another bowl, combine flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Mix until a dough forms.
- Roll the dough into small balls and place them on a baking sheet.
- Flatten each ball slightly with your hand.
- Bake for 10-12 minutes until the edges are golden.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Store cookies in an airtight container.
- For added flavor, you can mix in vegan chocolate chips.
- Adjust the sweetness by adding more or less sugar.
