- 1 lb beef stew meat
- 4 cups beef broth
- 2 cups water
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced potatoes
- 1 cup diced tomatoes
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1 bay leaf
Instructions
- In a large pot, brown the beef stew meat over medium heat.
- Add the onion and garlic, sauté until fragrant.
- Pour in the beef broth and water, bring to a boil.
- Add the carrots, celery, potatoes, tomatoes, salt, pepper, thyme, and bay leaf.
- Reduce heat to low, cover, and simmer for 1.5 hours or until the beef is tender.
- Remove the bay leaf before serving.
Notes
- You can add other vegetables like peas or corn if desired.
- Adjust seasoning to taste before serving.
- Store leftovers in an airtight container in the fridge for up to 3 days.
