A hearty and comforting vegetable beef soup made with ground hamburger, packed with nutritious vegetables and flavorful broth.

- 1 pound ground beef (hamburger)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes, undrained
- 4 cups beef broth
- 1 cup frozen green beans
- 1 cup corn (fresh or frozen)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat.
- Add chopped onion and minced garlic to the pot. Sauté until the onion is translucent.
- Stir in the carrots, celery, and bell pepper. Cook for about 5 minutes until the vegetables begin to soften.
- Add the diced tomatoes, beef broth, green beans, corn, basil, oregano, salt, and pepper. Bring to a boil.
- Reduce heat and let the soup simmer for 20-30 minutes, allowing the flavors to meld and the vegetables to become tender.
- Taste and adjust seasoning if necessary before serving hot.
Notes
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
- Freezes well for up to 3 months. Thaw in the refrigerator before reheating.
- Feel free to add any other vegetables you have on hand, such as peas or zucchini.
