  • 2 celery stalks, chopped

  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups beef broth
  • 1 cup frozen green beans
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat.
  2. Add chopped onion and minced garlic to the pot. Sauté until the onion is translucent.
  3. Stir in the carrots, celery, and bell pepper. Cook for about 5 minutes until the vegetables begin to soften.
  4. Add the diced tomatoes, beef broth, green beans, corn, basil, oregano, salt, and pepper. Bring to a boil.
  5. Reduce heat and let the soup simmer for 20-30 minutes, allowing the flavors to meld and the vegetables to become tender.
  6. Taste and adjust seasoning if necessary before serving hot.
