- 1 cup chickpeas, drained and rinsed

- 1 cup roasted sweet potatoes, cubed
- 1 avocado, sliced
- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice

Instructions
- In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until liquid is absorbed. Fluff with a fork and set aside.
- In a large bowl, combine chickpeas, cherry tomatoes, cucumber, roasted sweet potatoes, and avocado.
- In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
- Add the cooked quinoa to the vegetable mixture and drizzle with the dressing. Toss gently to combine.
- Serve in bowls and top with crumbled feta cheese and fresh parsley.
