- 1/4 cup milk
- 1/2 cup bell peppers, diced
- 1/4 cup onion, diced
- 1/4 cup black beans, drained and rinsed
- 1/4 teaspoon cumin
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 4 flour tortillas
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish (optional)
- Salsa for serving (optional)
Instructions
- In a medium bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
- In a non-stick skillet over medium heat, add the diced onions and bell peppers. Sauté for about 3-4 minutes until they are softened.
- Add the black beans, cumin, and paprika to the skillet. Stir to combine and cook for another 2 minutes.
- Pour the egg mixture into the skillet and scramble everything together until the eggs are fully cooked.
- Warm the tortillas in another skillet or microwave for a few seconds until pliable.
- Divide the scrambled egg mixture evenly among the tortillas. Top with shredded cheese.
- Roll up the tortillas tightly, folding in the sides as you go to form burritos.
- Serve warm with fresh cilantro and salsa if desired.
