Ingredients

  • 1/4 cup milk
  • 1/2 cup bell peppers, diced
  • 1/4 cup onion, diced
  • 1/4 cup black beans, drained and rinsed
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 4 flour tortillas
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish (optional)
  • Salsa for serving (optional)

Instructions

  1. In a medium bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
  2. In a non-stick skillet over medium heat, add the diced onions and bell peppers. Sauté for about 3-4 minutes until they are softened.
  3. Add the black beans, cumin, and paprika to the skillet. Stir to combine and cook for another 2 minutes.
  4. Pour the egg mixture into the skillet and scramble everything together until the eggs are fully cooked.
  5. Warm the tortillas in another skillet or microwave for a few seconds until pliable.
  6. Divide the scrambled egg mixture evenly among the tortillas. Top with shredded cheese.
  7. Roll up the tortillas tightly, folding in the sides as you go to form burritos.
  8. Serve warm with fresh cilantro and salsa if desired.
