Ingredients

- 2 cups of roasted vegetables
- 1 cup of quinoa
- 1 cup of vegetable broth
- 1/2 cup of cranberries
- 1/4 cup of nuts (walnuts or pecans)
- 1 teaspoon of thyme
- 1 teaspoon of rosemary
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Chop vegetables and place them on a baking sheet.
- Drizzle with olive oil, salt, and pepper.
- Roast vegetables for 25-30 minutes.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
- Stir in cranberries, nuts, thyme, and rosemary into the quinoa.
- Serve roasted vegetables over seasoned quinoa.
