A delicious and healthy vegetarian spread perfect for Super Bowl parties.


Ingredients

  • 1 cup of quinoa
  • 2 cups of vegetable broth
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup of fresh cilantro, chopped
  • 2 limes, juiced
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
  4. Remove from heat and let it sit covered for 5 minutes.
  5. Fluff quinoa with a fork and let it cool.
  6. In a large bowl, combine black beans, corn, red bell pepper, avocado, and cilantro.
  7. Add the cooled quinoa to the bowl.
  8. Drizzle lime juice over the mixture and season with salt and pepper.
  9. Toss gently to combine.
  10. Serve chilled or at room temperature.
