Ingredients

- 6 cups of diced mixed vegetables (bell peppers, spinach, onions)
- 8 large eggs
- 1 cup of milk
- 1 cup of shredded cheese
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of garlic powder
- 1 teaspoon of olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil and sauté the diced vegetables until tender.
- In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
- Add the sautéed vegetables to the egg mixture and stir to combine.
- Pour the mixture into a greased baking dish.
- Sprinkle shredded cheese on top.
- Bake for 30-35 minutes or until the eggs are set.
- Let cool for a few minutes before serving.
