- 4 cups seedless watermelon, cubed
- 2 cups cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the watermelon, cucumber, red onion, and mint leaves.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Top with feta cheese if using and serve immediately.
Notes
- For added flavor, you can also sprinkle some chili powder on top before serving.
- This salad can be made a few hours in advance; just wait to add the dressing until right before serving to keep the salad fresh.
