Ingredients

  • 2 cups cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the watermelon, cucumber, red onion, and mint leaves.
  2. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Top with feta cheese if using and serve immediately.

Notes
