- 1 lb ground beef
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz), drained and rinsed
- 1 cup corn
- 2 cups cooked rice
- 1 tablespoon chili powder
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Stir in the diced tomatoes, kidney beans, corn, and cooked rice.
- Add chili powder, salt, and pepper. Mix well.
- Simmer for about 10 minutes, stirring occasionally.
- Serve hot.

- This dish is versatile; you can add more vegetables if desired.
- Store leftovers in the refrigerator for up to 3 days.
- Reheat in a microwave or on the stove before serving.
