A healthy and flavorful chicken tortilla soup perfect for Weight Watchers.
Ingredients

- 1 lb boneless, skinless chicken breast
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium chicken broth
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup frozen corn
- 1 can (15 oz) black beans, drained and rinsed
- Juice of 1 lime
- Fresh cilantro for garnish
- Baked tortilla strips for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Cook until softened.
- Add chicken breast and cook until browned.
- Stir in diced tomatoes, chicken broth, cumin, chili powder, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove chicken, shred it, and return to the pot.
- Add corn and black beans. Simmer for 5 more minutes.
- Squeeze lime juice into the soup.
- Serve garnished with cilantro and baked tortilla strips.

- Adjust spices to taste.
- Store leftovers in an airtight container for up to 3 days.
