Description

Ingredients

  • 8 oz feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 1/4 cup Greek yogurt
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 pint cherry tomatoes
  • 1 tablespoon balsamic vinegar
  • Fresh herbs (like basil or parsley) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the cherry tomatoes with olive oil, balsamic vinegar, salt, and pepper. Spread them out on a baking sheet.
  3. Roast the tomatoes in the oven for about 20-25 minutes or until they are blistered and caramelized.
  4. While the tomatoes are roasting, prepare the whipped feta dip. In a food processor, combine the crumbled feta cheese, cream cheese, Greek yogurt, minced garlic, lemon juice, and a pinch of salt and pepper.
  5. Blend until smooth and creamy, scraping down the sides as needed. Adjust seasoning to taste.
  6. Once the tomatoes are done roasting, let them cool slightly.
  7. To serve, spread the whipped feta dip on a serving plate and top with the roasted tomatoes. Garnish with fresh herbs.

Notes
