A creamy and tangy whipped feta dip topped with sweet roasted tomatoes, perfect for parties or as a snack.

- 8 oz feta cheese, crumbled
- 1/2 cup cream cheese, softened
- 1/4 cup Greek yogurt
- 1/4 cup olive oil
- 1 clove garlic, minced
- 1 teaspoon lemon juice
- Salt and pepper to taste
- 1 pint cherry tomatoes
- 1 tablespoon balsamic vinegar
- Fresh herbs (like basil or parsley) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the cherry tomatoes with olive oil, balsamic vinegar, salt, and pepper. Spread them out on a baking sheet.
- Roast the tomatoes in the oven for about 20-25 minutes or until they are blistered and caramelized.
- While the tomatoes are roasting, prepare the whipped feta dip. In a food processor, combine the crumbled feta cheese, cream cheese, Greek yogurt, minced garlic, lemon juice, and a pinch of salt and pepper.
- Blend until smooth and creamy, scraping down the sides as needed. Adjust seasoning to taste.
- Once the tomatoes are done roasting, let them cool slightly.
- To serve, spread the whipped feta dip on a serving plate and top with the roasted tomatoes. Garnish with fresh herbs.
Notes
- Serve with pita chips, fresh vegetables, or crusty bread.
- This dip can be made ahead of time and stored in the refrigerator for up to 3 days.
