- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 12 mini sweet peppers, halved and seeded
- Fresh herbs for garnish (optional)
Instructions
- In a mixing bowl, combine the crumbled feta cheese, cream cheese, olive oil, lemon juice, garlic powder, black pepper, and dried oregano.
- Using a hand mixer or food processor, blend the ingredients until smooth and creamy. Taste and adjust seasoning as necessary.
- Preheat the oven to 375°F (190°C).
- Arrange the halved mini peppers on a baking sheet, cut side up.
- Using a spoon or piping bag, fill each mini pepper half with the whipped feta mixture.
- Bake in the preheated oven for 15-20 minutes, or until the peppers are tender and the filling is slightly golden.
- Remove from the oven and allow to cool slightly. Garnish with fresh herbs if desired before serving.
