Description

These whipped feta stuffed mini peppers are creamy, tangy, and perfect for a party appetizer or a healthy snack. The vibrant colors of the mini peppers make for an appealing presentation.


Ingredients

  • 8 oz feta cheese, crumbled
  • 4 oz cream cheese, softened
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 12 mini sweet peppers, halved and seeded
  • Fresh herbs for garnish (optional)

Instructions

  1. In a mixing bowl, combine the crumbled feta cheese, cream cheese, olive oil, lemon juice, garlic powder, black pepper, and dried oregano.
  2. Using a hand mixer or food processor, blend the ingredients until smooth and creamy. Taste and adjust seasoning as necessary.
  3. Preheat the oven to 375°F (190°C).
  4. Arrange the halved mini peppers on a baking sheet, cut side up.
  5. Using a spoon or piping bag, fill each mini pepper half with the whipped feta mixture.
  6. Bake in the preheated oven for 15-20 minutes, or until the peppers are tender and the filling is slightly golden.
  7. Remove from the oven and allow to cool slightly. Garnish with fresh herbs if desired before serving.
