Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans, drained
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup sour cream (optional)
  • 1/2 cup shredded Monterey Jack cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until soft, about 5 minutes.
  3. Add minced garlic and cook for 1 minute.
  4. Add chicken breasts, cumin, oregano, salt, and black pepper. Cook until chicken is browned.
  5. Pour in chicken broth and bring to a simmer.
  6. Cover and cook for 20 minutes, or until chicken is fully cooked.
  7. Remove chicken, shred it, and return to the pot.
  8. Add white beans and green chilies. Simmer for 10 minutes.
  9. Stir in sour cream and cheese if using.
  10. Serve hot, garnished with fresh cilantro.
