Description
A hearty and flavorful white chicken chili made with tender chicken, white beans, and mild green chilies.

- 1 lb boneless, skinless chicken breasts
- 2 cans (15 oz each) white beans, drained
- 1 can (4 oz) diced green chilies
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/2 cup sour cream (optional)
- 1/2 cup shredded Monterey Jack cheese (optional)
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until soft, about 5 minutes.
- Add minced garlic and cook for 1 minute.
- Add chicken breasts, cumin, oregano, salt, and black pepper. Cook until chicken is browned.
- Pour in chicken broth and bring to a simmer.
- Cover and cook for 20 minutes, or until chicken is fully cooked.
- Remove chicken, shred it, and return to the pot.
- Add white beans and green chilies. Simmer for 10 minutes.
- Stir in sour cream and cheese if using.
- Serve hot, garnished with fresh cilantro.
Notes
- For extra creaminess, blend one can of white beans before adding.
- Adjust spice level with jalapeños or hot sauce.
- Store leftovers in the fridge for up to 3 days.
