A hearty and flavorful white chicken chili made easily in a slow cooker. Perfect for a comforting meal with minimal effort.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 cup chicken broth
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • Fresh cilantro, chopped (optional)

Instructions

  1. Place chicken breasts at the bottom of the slow cooker.
  2. Add white beans, corn, green chilies, chicken broth, cumin, garlic powder, salt, and black pepper.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. Remove chicken, shred it, and return to the slow cooker.
  5. Stir in sour cream and shredded cheese until melted.
  6. Garnish with fresh cilantro if desired before serving.

Notes

  • For extra heat, add jalapeños or red pepper flakes.
  • Use rotisserie chicken to save time.
