  • 2 (8 oz) packages cream cheese, softened

  • 2 large eggs
  • 1/2 cup sour cream
  • 1 cup white chocolate chips, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 325°F (160°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press the mixture into the bottom of the prepared baking pan to form the crust.
  3. In a large bowl, beat the cream cheese until smooth. Add 1 cup sugar and vanilla extract, and mix until well combined.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the sour cream and melted white chocolate until fully incorporated.
  5. Gently fold in the fresh raspberries, being careful not to break them apart too much.
  6. Pour the cheesecake mixture over the crust in the baking pan, spreading it evenly.
  7. Bake for 30-35 minutes or until the edges are set and the center is slightly jiggly. The cheesecake will firm up as it cools.
  8. Remove from the oven and allow to cool at room temperature. Refrigerate for at least 4 hours or overnight before cutting into bars.
