A hearty beef stew with rich flavors, perfect for cold days.
Ingredients

- 2 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 4 garlic cloves, minced
- 4 cups beef broth
- 1 cup red wine
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 potatoes, diced
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides. Remove and set aside.
- In the same pot, sauté onions, carrots, celery, and garlic until softened.
- Return beef to the pot. Add beef broth, red wine, tomato paste, thyme, rosemary, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Add potatoes and simmer for another 30 minutes until tender.
- Remove bay leaves before serving.
Notes
- For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew before serving.
- This stew tastes even better the next day.
