- 4 cups yellow squash, sliced
- 1 medium onion, chopped
- 2 tablespoons butter
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 2 large eggs, beaten
- 1 cup crushed crackers or breadcrumbs
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, melt the butter over medium heat. Add the sliced yellow squash and chopped onion. Sauté until the squash is tender, about 5-7 minutes.
- In a large bowl, combine the cooked squash and onion mixture with shredded cheddar cheese, sour cream, milk, beaten eggs, garlic powder, onion powder, salt, and pepper. Mix well.
- Pour the mixture into a greased 9×13 inch baking dish.
- Top with crushed crackers or breadcrumbs evenly over the casserole.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.
- Allow to cool for a few minutes before serving.
Notes
- For added flavor, you can mix in cooked bacon or sausage.
- Feel free to substitute with different types of cheese to suit your taste.
- This casserole can be made ahead of time and baked just before serving.
