  • 4 cups yellow squash, sliced
  • 1 medium onion, chopped
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 large eggs, beaten
  • 1 cup crushed crackers or breadcrumbs
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, melt the butter over medium heat. Add the sliced yellow squash and chopped onion. Sauté until the squash is tender, about 5-7 minutes.
  3. In a large bowl, combine the cooked squash and onion mixture with shredded cheddar cheese, sour cream, milk, beaten eggs, garlic powder, onion powder, salt, and pepper. Mix well.
  4. Pour the mixture into a greased 9×13 inch baking dish.
  5. Top with crushed crackers or breadcrumbs evenly over the casserole.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.
  7. Allow to cool for a few minutes before serving.
