- 2 pounds young beef, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened.
- Add the young beef cubes to the pot, browning them on all sides.
- Stir in the carrots and potatoes, mixing well with the beef.
- Pour in the beef broth and red wine, then add the tomato paste, thyme, rosemary, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the beef is tender.
- Adjust seasoning as needed, and serve hot, garnished with fresh parsley.
