  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened.
  2. Add the young beef cubes to the pot, browning them on all sides.
  3. Stir in the carrots and potatoes, mixing well with the beef.
  4. Pour in the beef broth and red wine, then add the tomato paste, thyme, rosemary, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the beef is tender.
  6. Adjust seasoning as needed, and serve hot, garnished with fresh parsley.
