Ingredients

- 200g halloumi cheese
- 2 cups mixed salad greens
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1 red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Preheat your grill or BBQ to medium heat.
- Slice the halloumi into 1cm thick pieces.
- Brush halloumi slices lightly with olive oil.
- Grill halloumi for 2-3 minutes per side until golden.
- In a bowl, mix salad greens, cucumber, cherry tomatoes, and red onion.
- Whisk together olive oil, lemon juice, honey, salt, and pepper.
- Toss salad with dressing.
- Top with grilled halloumi and serve immediately.
