Ingredients

- 1 lb (450g) shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 limes, juiced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Cook shrimp in a skillet over medium heat until pink, about 2-3 minutes per side. Let cool.
- In a large bowl, combine diced avocado, red onion, and cilantro.
- Add cooled shrimp to the bowl.
- Whisk together lime juice, olive oil, salt, black pepper, and red pepper flakes.
- Pour the dressing over the salad and gently toss to combine.
- Serve immediately or refrigerate for up to 1 hour before serving.
Notes
- For best results, use fresh lime juice.
- Add diced cucumber or cherry tomatoes for extra crunch.
- Adjust spice level by adding more or less red pepper flakes.
