- 1 pre-made tart shell
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- 4 large eggs, separated
- 1/4 cup unsalted butter, melted
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, whisk together the sugar, lemon juice, egg yolks, melted butter, lemon zest, and salt until smooth.
- Pour the lemon filling into the pre-made tart shell and bake for 20-25 minutes, or until set.
- While the tart is baking, prepare the meringue. In a clean mixing bowl, beat the egg whites and cream of tartar until soft peaks form.
- Gradually add the remaining sugar and continue beating until stiff peaks form.
- Remove the tart from the oven and spread the meringue over the hot lemon filling, creating peaks and swirls.
- Return the tart to the oven and bake for an additional 10-15 minutes, or until the meringue is golden brown.
- Allow the tart to cool before slicing and serving.
