Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the sugar, lemon juice, egg yolks, melted butter, lemon zest, and salt until smooth.
  3. Pour the lemon filling into the pre-made tart shell and bake for 20-25 minutes, or until set.
  4. While the tart is baking, prepare the meringue. In a clean mixing bowl, beat the egg whites and cream of tartar until soft peaks form.
  5. Gradually add the remaining sugar and continue beating until stiff peaks form.

  7. Return the tart to the oven and bake for an additional 10-15 minutes, or until the meringue is golden brown.
