Ingredients

- 1 pound ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 cups chicken broth
- 1 medium zucchini, diced
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 2 tablespoons olive oil
- Fresh basil for garnish
Instructions
- In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
- In a large pot, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. Remove meatballs and set aside.
- In the same pot, add diced carrots, celery, and zucchini. Sauté for about 5 minutes until softened.
- Add the diced tomatoes and chicken broth to the pot. Bring to a simmer.
- Return the meatballs to the pot and let them cook in the broth for about 15-20 minutes, until cooked through.
- Serve hot, garnished with fresh basil.
Notes
- You can add other vegetables like spinach or bell peppers for extra nutrition.
- For added flavor, use homemade chicken broth.
