Ingredients

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1 medium zucchini, diced
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 2 tablespoons olive oil
  • Fresh basil for garnish

Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  2. Form the mixture into small meatballs, about 1 inch in diameter.
  3. In a large pot, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. Remove meatballs and set aside.
  4. In the same pot, add diced carrots, celery, and zucchini. Sauté for about 5 minutes until softened.
  5. Add the diced tomatoes and chicken broth to the pot. Bring to a simmer.
  6. Return the meatballs to the pot and let them cook in the broth for about 15-20 minutes, until cooked through.
  7. Serve hot, garnished with fresh basil.

Notes

  • You can add other vegetables like spinach or bell peppers for extra nutrition.
  • For added flavor, use homemade chicken broth.
