Deliciously moist and sweet zucchini bars topped with a creamy frosting, perfect for dessert or a snack!
Ingredients

- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins (optional)
- Cream cheese frosting (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine the grated zucchini, granulated sugar, brown sugar, and vegetable oil. Mix until well combined.
- Add in the eggs and vanilla extract, and mix until smooth.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, fold in the walnuts and raisins.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and allow to cool completely in the pan on a wire rack.
- Once cooled, spread cream cheese frosting on top before slicing into bars.
Notes
- Store leftover zucchini bars in an airtight container in the refrigerator for up to 5 days.
- Feel free to add chocolate chips for an extra treat!
- These bars can be frozen for up to 3 months; just thaw before serving.
