Ingredients

  • 2 medium zucchinis, spiralized into noodles
  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup fresh basil pesto
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add shrimp and cook for 2-3 minutes per side until pink and opaque.
  4. Season with salt, black pepper, and red pepper flakes (if using).
  5. Remove shrimp from the skillet and set aside.
  6. Add zucchini noodles to the same skillet and cook for 2-3 minutes until tender but still crisp.
  7. Toss zucchini noodles with pesto until evenly coated.
  8. Return shrimp to the skillet and mix with the noodles.
  9. Garnish with Parmesan cheese if desired and serve immediately.
