Description

A delicious and healthy twist on traditional lasagna, featuring layers of zucchini, ground turkey, and ricotta cheese.


Ingredients

  • 2 large zucchinis, sliced into thin strips
  • 1 pound ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground turkey, onion, and garlic over medium heat until the turkey is browned and cooked through.
  3. Add the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 10 minutes.
  4. In a bowl, combine the ricotta cheese, egg, and half of the Parmesan cheese. Mix well.
  5. In a 9×13 inch baking dish, spread a thin layer of the turkey mixture on the bottom.
  6. Layer half of the zucchini strips over the turkey mixture, followed by half of the ricotta mixture, and then half of the mozzarella cheese.
  7. Repeat the layers with the remaining ingredients, ending with the mozzarella and the remaining Parmesan cheese on top.
  8. Cover the dish with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before slicing and serving.

Notes

  • Feel free to add other vegetables like spinach or bell peppers to the layers.
  • You can substitute ground turkey with ground beef or chicken if desired.
