A delicious and healthy twist on traditional lasagna, featuring layers of zucchini, ground turkey, and ricotta cheese.

- 2 large zucchinis, sliced into thin strips
- 1 pound ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) crushed tomatoes
- 1 can (6 oz) tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground turkey, onion, and garlic over medium heat until the turkey is browned and cooked through.
- Add the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 10 minutes.
- In a bowl, combine the ricotta cheese, egg, and half of the Parmesan cheese. Mix well.
- In a 9×13 inch baking dish, spread a thin layer of the turkey mixture on the bottom.
- Layer half of the zucchini strips over the turkey mixture, followed by half of the ricotta mixture, and then half of the mozzarella cheese.
- Repeat the layers with the remaining ingredients, ending with the mozzarella and the remaining Parmesan cheese on top.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before slicing and serving.
Notes
- Feel free to add other vegetables like spinach or bell peppers to the layers.
- You can substitute ground turkey with ground beef or chicken if desired.
