  2. Heat the heavy cream in a saucepan until it simmers, then pour it over the chocolate.
  3. Let it sit for 2 minutes, then stir until smooth.
  4. Add the espresso powder and butter, stirring until fully combined.
  5. Cover the mixture and refrigerate for at least 2 hours.
  6. Once firm, scoop small portions and roll into balls.
  7. Coat each truffle in cocoa powder.
